Most people get Golden Paste right first time, but a few problems come up again and again in the Turmeric User Group. Here’s how to fix them.
The paste is too runny or too dry
Simmer it a little longer if it’s runny, or add a splash of water if it’s stiff or gritty. It thickens as it cools and once the oil is stirred in, so stop when it’s slightly looser than you want.
It tastes bitter or “earthy”
Turmeric is naturally earthy. Mix it into food rather than eating it straight: it goes well in curries, soups, scrambled eggs, smoothies or a warm milk drink. Some people like a little Ceylon cinnamon or ginger in the paste. Leave out honey and sugar.
My stomach (or my dog’s) is upset
This nearly always means starting with too much. Drop back to a small amount, about 1/4 teaspoon or less, and build up more slowly. Taking it with food helps. → How much turmeric should I take?
The oil separates in the jar
That’s normal. Stir it before each use.
It’s gone mouldy
Golden Paste keeps 2 to 3 weeks in the fridge. Use a clean spoon each time, and freeze anything you won’t use within two weeks. Silicone ice-cube trays make handy single servings.
My dog or horse smells like cat pee
Some animals develop this smell when they start turmeric. It usually fades within a couple of weeks. Adding about a tablespoon of Ceylon cinnamon (not cassia) to each batch can help.
Everything is yellow!
For stains, use rubbing alcohol on most surfaces, undiluted dishwashing liquid on hard surfaces, and a cold wash with detergent for clothes. Avoid bicarbonate of soda; it turns the stain red.
Can I use pre-ground pepper or skip the oil?
You can, but the paste won’t work as well. Freshly cracked pepper and a good oil both help your body absorb turmeric. → Golden Paste: the recipe
